Queen Cakes
Ingredients
4 oz margarine, or butter
4 oz sugar
2 eggs
6 oz flour
Milk if necessary
1 tsp baking powder
2 oz dried fruit
½ tsp vanilla essence
Preparation
- Follow the creaming method for Corn Gems.
- Make the mixture to a dropping consistency. Half-fill some small
well-greased pans.
- Bake in a moderate oven for 15 - 20 minutes.

Ingredients
7 oz flour
2 level tsp baking powder
3 oz margarine
3 oz sugar
1 egg
½ cup milk
1 tsp vanilla essence
Salt to taste
Preparation
- Mix the flour, baking powder and salt.
- Cream the margarine and sugar thoroughly. Add the egg and beat well.
- Alternately, add the dry ingredients, milk and vanilla essence.
- Put into queen cake pans and bake in a moderate oven for 20 to 25 minutes.
